1) I have no idea what that stuff IS or is called! If you find out, let me know!
2) I don't have any tofu-specific ones and I tend to only make tofu 2 ways, both recipes are in Vegan with Vengeance (the fritata and the marinated tofu Asian-style). I'll be happen to scan and email those 2 recipes though if you want them! The marinated baked tofu is versatile and you can use it in sandwiches or as an add-in in pasta or rice dishes. I think there's also a tofu scramble I used from Skinny Bitch in the Kitch, too.
I looked at these carefully in person while in the Vancouver store last month. They seemed to have a lot of padding in the ball of the foot, but the angular style didn't call to me.

I've been pondering the orange ones for a year. The heel and hard wood sole give me pause, tho.

Those sure are pretty but I could never walk in them, well maybe I could if I had a cane with me to hold on to and my feet would hurt. =)
Those are beautiful! Any shoe made of straight up wood has me at hello. I guess the whole hard-to-walk-in comments are justified though :)
Hope you're having a springy day!
